Must-haves from the post: Cristina Ferrare’s Cook Book “Food for Thought”
This is definitely a bittersweet post. I first shared this a few years back and that’s of course my sweet mother who passed away in October with TV Host & author Cristina Ferrare. This was such a special day as my mom was such a huge fan of Cristina’s. I remember mom talking about her when I was growing up. So to be able to have her meet Cristina was just such a wonderful moment and Cristina was ever the perfect host and teacher.
Cristina taught us how to make her delicious Frisee Salad With Creamy Shallot Vinaigrette which is a perfectly festive salad for the Holiday…but I say it’s perfect year-round. Cristina is the author of multiple cookbooks, including Cristina Ferrare’s Big Bowl of Love, and most recently Food For Thought.
Also, the silly shot of us making faces was Cristina’s idea, and that’s her gorgeous daughter Arianna who has her own very successful lifestyle website and Instagram.
Frisée Salad with Creamy Shallot Vinaigrette
Equipment
- Salad Bowl
- Serving Utensils
Ingredients
Salad
- 3 Large heads of Frisée lettuce rinsed and spun dry
- 1/2 cup Greek or French Feta Cheese small crumbles
- 6 Radishes sliced super thin
- 1/3 cup Walnuts chopped
- 1 cup Fresh Pomegranate Seeds
Creamy Shallot Vinaigrette
- 1 tbsp Dijon Mustard
- 3/4 cup Extra Virgin Olive Oil
- 1 tbsp Shallots finely minced
- 2 tbsp Apple Cider Vinegar
- 1 tbsp Balsamic Vinegar
- 2 tbsp Seasoned Rice Vinegar
- 2 tbsp Fresh lemon Juice
- 1/2 tsp Kosher Salt
- 1 Small Garlic Clove smashed
Instructions
Salad:
- Layer all of the ingredients starting with the Frisée on a flat platter and then layer in all of the rest of the items.
Dressing:
- In a bowl add Dijon mustard using a whisk drizzle olive oil slowly to emulsify.
- Add shallots, the rest of the ingredients, and whisk together well to form a smooth and creamy dressing
- Use a tablespoon to drizzle the dressing over the salad. And enjoy!
