Green Goddess Grilled Cheese

Meet my kinda healthy, mostly indulgent Grilled Cheese Sandwich of your dreams. My Green Goddess Grilled Cheese starts with perfectly buttered and grilled sourdough bread. Inside you’ll find the freshest spinach and basil in a garlicky sauce smothered by melty Mozzarella. This is definitely a crowd pleaser!!!

  • food processor
  • Griddle or Frying Pan


  • 1 1/2 Tbsp Olive Oil
  • 12 Basil Leaves fresh
  • 2 Cups Fresh Spinach loosely packed
  • 3 Cloves Garlic
  • 1/4 tsp Salt
  • 1/8 tsp Black Pepper
  • 1/2 Stick Softened Butter to spread
  • 8 Slices Sourdough Bread
  • 1 Avocado sliced
  • 1 package Mozzarella Cheese slices


  • Put Basil, Spinach, Garlic, Salt and Pepper in a blender and pulse until minced. 
  • Add Olive Oil and pulse until combined.
  • Heat a medium size frying pan or griddle on low heat.
  • Butter one side of each slice of bread.
  • Top 2 slices of the non-buttered side of bread with sliced Mozzarella and a thin layer of Green Goddess Sauce.
  • Place those 2 bread slices, butter side down on the heated frying pan and cook on low heat until the bread is golden brown.
  • Top the cheese and the sauce with avocado slice and place remaining bread, buttered side up on top.
  • Carefully flip the sandwich and grill until golden brown.
  • Serve while it is hot and melty!
