Flaming Pepper Steak with Brandy Cream Sauce
This is one of those recipes that could actually make a vegetarian eat meat again. First of all the filet is coated in pepper, cooked in butter, then set on fire thanks to the brandy, add the cream and you’ve got a fancy dish in next to no time that tastes amazing!

- 4 filets Steak of choice at least 1" thick
- 4 Tbsp Avocado Oil or other high smoke point
- 4 Tbsp Butter
- 3 Tbsp Peppercorns
- 1 tsp Salt
- 4 Tbsp Brandy
- 2/3 cup Whipping Cream
Rub each steak with oil on both sides
Press peppercorns into both sides of each steak
Heat butter and oil in a frying pan over moderate heat until very hot
*DO NOT LET THE BUTTER BURN
Saute the steaks for 4 minutes on each side
Season with salt
Add the brandy and light immediately - then STAND BACK and be CAREFUL! :)
When the flames have died down, remove the steaks and place on a hot plate to keep them warm
Add the whipping cream to the same pan, mixing it with the pan juices - boil for 2 to 3 minutes until reduced, slightly thickened.
Four sauce over steak and serve!
