Special Pancakes
We call these special pancakes, a cross between a crepe and a pancake. You can fill them with whatever you would prefer. We typically add either maple syrup or powdered sugar, and sometimes if I am lucky I get some fresh fruit in there. My daughter likes hers crispy like the ones in the video, while my son does not…whichever way you choose, hope you love them as much as we do.

- 1/2 Cup Flour
- 1/4 Cup Sugar
- 3 Tbsp Butter
- 1 Cup Milk
- 1 tsp Vanilla Extract
- 3 Eggs
- 1 pinch Salt
Heat milk, butter, and vanilla.
In a separate bowl whisk eggs and stir in flour, sugar, and salt.
Poor heated milk into egg mixture and whisk until smooth.
Pour ¼ cup batter into a heated (medium high) crepe pan (I use just a small non- stick pan) that has been coated with butter.
Tilt the pan with a circular motion so that the batter coats the surface evenly.
Cook for about 2 minutes, until the bottom is light brown.
Serve with either powdered sugar, maple syrup or fruit.
