Health(IER) Pumpkin Spiced Latte
If I am being honest, I don’t get the whole Pumpkin Spice Latte craze (I know, what’s wrong with me? Trust me the list is long!) but for all you PSL lovers wait till you taste Cristina Ferrare’s spin on the seasonal drink. Now even I am a fan! And her version is so much healthier than any coffee shop version. Cristina’s is filled with all types of healthy ingredients: super strong coffee + ginger + coconut or hazelnut milk + pure pumpkin puree, topped with a coconut or rice whipped cream.

- 4 Cups Your favorite coffee
- 2 Tbsp Cinnamon
- 1 Tbsp Ground nutmeg
- 1 1/2 Tbsp Ground ginger
- 2 Cups Milked hazelnuts *sub coconut milk
- 2 Tbsp Agave nectar
- 2 Tbsp Pure pumpkin puree not the spiced one for pies
- 1 Tbsp Pure vanilla extract
- 1/2 Cup Strong hot coffee
- Coconut whipped cream *sub rice whipped cream
Make the spice blend in a small bowl by whisking together cinnamon, ground nutmeg and ginger.
In a small saucepan add hazelnut or coconut milk, agave syrup, pumpkin puree and heat until hot but not boiling.
Whisk in the vanilla extract, spice blend and coffee.
Divide your coffee between two mugs. Top with coconut whip cream or rice whipped cream.
This drink can also be served over ice! Super delicious!
