Monday Meals With Me: Green Goddess Grilled Cheese

Let me just tell you that when I made this Green Goddess Grilled Cheese for the twins, the first thing they said after trying it was “Mom this is sooo good you’ve got to do this for that blog thing you do!!” Haha!  

So there it is, the twin’s stamp of approval, and as I’ve shared with you in the past they’ve become super picky about food as teenagers, as in they pretty much dislike everything I make them these days.

What I love about this grilled cheese is that in addition to all the cheesy goodness, you get spinach, basil, avocado and garlic! So although I wouldn’t go as far as saying it’s healthy, it definitely has healthy things in there, so it’s a win-win for everyone!

As with all my recipes you can adjust the garlic and spices, I tend to go overboard on all that, just ask the kids. The cheese I choose is Mozzarella, but you could substitute whatever you like! I also like a hearty sourdough bread which I think holds up to everything you’re jamming in there. And if you want you could add in extra spinach leaves with the avocados or even a tomato slice.

Green Goddess Grilled Cheese Sandwich

Ingredients

1½ Tbsp Olive Oil

12 Fresh Basil Leaves

2 Loose Cups Of Fresh Spinach Leaves

3 Cloves Garlic

¼ Tsp Salt

⅛ Tsp Black Pepper

Butter, Softened

4 Large Slices Sourdough Bread

4 – 6 Thin Slices Avocado

Fresh Mozzarella Cheese, Sliced

Directions

  1. Put Basil, Spinach, Garlic, Salt And Pepper In A Blender And Pulse Until Minced. Add Olive Oil And Pulse Until Combined.
  2. Heat Medium Size Frying Pan Or Griddle On Low Heat.
  3. Butter One Side Of Each Slice Of The Bread. Top Two Slices Of The Non-Buttered Side Of Bread With Sliced Mozzarella And A Thin Layer Of Sauce. Place Those Two Bread Slices, Butter Side Down, In The Heated Frying Pan And Cook On Low Heat Until The Bread Is Golden Brown. While Still In The Frying Pan Top The Cheese And Sauce With Avocado Slices Place Remaining Bread, Butter Side Up On Top Of Spinach Leaves And Press Down Slightly. Carefully Flip Sandwich And Grill Until Golden Brown.
  4. Serve Immediately.
