Curried Beef Pita Pockets
Curry Beef Pita Pockets are a great way to get your protein and veggies all at once. I love that you can make them as mild or spicy as you like. Make sure you buy the pita’s that are “pockets”...I like to use wheat ones, but plain ones are just as good!

- Small Bowls
- Cookwear of choice
Ingredients
- 1 pound Ground Beef
- 1 medium Onion chopped
- 1 Garlic Clove halved
- 1 tbsp Curry Powder
- 1/2 cup Water
- 1 1/2 tsp Salt
- 1/2 tsp Sugar
- 1/4 tsp Pepper
- 1 medium Tomato seeded and diced
- 1 medium Zuchinni diced
- 4 Pita Pockets
Instructions
- In a large skillet pan, brown the ground beef with the onion, garlic and curry
- Drain and discard garlic
- Mix in the water, salt, sugar and pepper
- Cover and simmer for 15 minutes
- Add the tomatoes and zucchini chunks; cook until heated through
- Spoon out the meat mixture into pita pockets
