If you’re a breakfast person like I am, you have to try my recipe for these simple yet decadent Cream Cheese and Chive Scrambled Eggs! This breakfast hack is easy and loved by all ages (my kids cannot get enough of them). I replicated the recipe from a cafe in St. Helena that I used to go to in college. I remember the first time I tried these magical eggs, I couldn’t believe how fluffy and delicious they were. I figured out how they were made and have been making them ever since!
I cherish mornings with my kids and taking the time to make breakfast together. For the first 11 years of their lives, I wasn’t able to make them breakfast and spend that time with them. As a newscaster, I would get up at 2:30am to get ready to go live for the morning news, which left barely enough time to down a protein shake, let alone cook up some eggs! I would always make sure to cook special weekend breakfasts for them but I am thrilled that our morning breakfast time doesn’t have to be restricted to Saturdays and Sundays anymore.

Cream Cheese Chive EggsPrint Recipe
8 large eggs
2 ounces cream cheese, cut into chunks
1 tablespoons minced fresh chives plus 1 additional tablespoon for garnish
1 tablespoons butter
In a bowl whisk together the eggs, 1 tablespoons of the chives, and salt and pepper to taste. In a large heavy skillet melt the butter over moderate heat, add the egg mixture, and cook it, stirring, for 6 to 8 minutes. Just before the eggs are done, toss in the chunks of cream cheese and stir, you’ll still want to see the yummy chunks of cream cheese. Serve the eggs sprinkled with the additional chives.
