Style Spotlight: Aquarius Cocktail

I am pretty sure no one would ever describe my style as funky or eclectic…as much as I wanted to look like Sarah Jessica Parker’s Carrie in “Sex and the City” I’ve always been more of a Charlotte…but I am slowly changing that with the help of Aquarius Cocktail. 

I discovered this Los Angeles-based brand earlier this year and have loved learning how to mix things up a bit with the help of designer Lissa Zwahlen. Lissa is known to slap a sparkly happy face on a vintage cashmere cardigan that she’s tie-dyed and cropped after adding silk flourishes to the wrists (it’s actually one of my favorites)!

Lissa says she wanted everyday pieces that reflected her life. Styles that were interesting. Understandable. Relaxed, but with an edge. She wanted the daytime polish to transition to evening chic. The result was luxurious silk cut into easy fits, then washed to feel like favorites. AqC has grown into an elevated collection of season-less pieces designed to layer into any closet ­­– the perfect expression of West Coast lifestyle.

She got her start designing board shorts for men with Gotcha and Quiksilver, then launched the Roxy brand, which established a new and distinctive female imprint on traditional surf culture. After that, she worked for some quintessential California brands before launching her own. 

One of the things I really appreciate about the line is it’s considered sustainable fashion…many of the pieces are reworked vintage pieces given a new life and a new attitude. Have fun mixing up your closet with a big dose of spunk and just enough lady-like touches to keep it all interesting!

Quick and Easy Pesto Sauce

Sure you could buy pre-made pesto at the store, but why would you when you can make it at home and it’s just so much more vibrant and fresh, plus you can control how thick or runny you want it to be. It takes just 5 min to make and trust me having a jar of pesto in your fridge is always a life saver for those busy weeknights. All you have to do is cook up some pasta, slather on that pesto and sprinkle on some Parmesan. Done and done. Fresh pesto will last 5 to 7 days in the fridge, or up to 8 months in the freezer!

Ingredients
  

  • 1/2 cup pine nuts you can use a combo of walnuts and pine nuts, I love all pine nuts
  • 3 tbsp diced garlic about 9 cloves, of course i use more
  • 5 cups fresh basil leaves
  • 1 tsp kosher salt
  • 1 tsp freshly ground black pepper
  • 1 1/2 cups good olive oil
  • 1 cup freshly grated cheese I like reggiano

Instructions
 

  • Place the pine nuts and garlic in a food processor or blender.
  • Pulse for 30 seconds.
  • Add the basil leaves, salt, and pepper.
  • With the blades running slowly pour the olive oil in until the pesto is finely pureed.
  • Add the cheese and puree for a minute.
  • You can serve with your favorite pasta, or over baked chicken. You can also store it in the refrigerator or freezer.

Skillet Chicken with Garlic Herb Butter

This is a super quick and easy seared skillet chicken topped with a delicious garlic and herb pan sauce. It’s a flavorful protein-rich dish, and just what you need for busy weekdays. It can be on the table in 25 minutes. The step not to miss is basting the chicken with the butter at the end, it really crisps up the skin and seals in the flavor.

Skillet Chicken with Garlic Herb Butter

Ingredients
  

  • 4 Skin-on Boneless Chicken Breasts 6-8oz each
  • 3/4 tsp Kosher Salt
  • 1/4 tsp Fresh Ground Black Pepper
  • 1 tbsp Extra Virgin Olive Oil
  • 4 cloves Garlic smashed
  • 3 tbsp Unsalted Butter
  • 2 sprigs Fresh Rosemary
  • 8 sprigs Fresh Thyme
  • Lemon Slices

Instructions
 

  • Season both sides of chicken with salt and pepper.
  • In a large skillet, heat the oil over medium heat. Add the garlic, let it flavor the oil, then add chicken, skin side down, and cook until the skin is golden brown and crisp, 5 to 7 minutes.
  • Flip and cook the chicken for another 5 to 7 minutes. If the garlic starts to get brown, take it out and save for later.
  • Reduce the heat to low, add the butter and lemon slices. Pull the rosemary leaves from their sprigs and sprinkle over the chicken.
  • Scatter the thyme sprigs over the chicken, too. Return the garlic to the skillet and, using a spoon, baste the chicken with the melted butter (for about 30 seconds, trust me this step is what makes that skin so crispy and good).
  • Serve the chicken with the garlic and herbs and sliced lemons.

Creamy One Pot Pasta with Peas and Mint

Growing up peas were at the top of my most hated vegetable list. At some point over the years I made peace with peas, yes I gave peas a chance (sorry, it just wrote itself).  This would have to be one of my favorite ways to have them: mashed with garlic, lemon, mint and mixed in with pasta.  What’s not to love? Oh and did I mention it’s super fast and super easy?  Enjoy!!

Creamy One Pot Pasta with Peas and Mint

Ingredients
  

  • 1 bag Frozen peas 10 oz.
  • 1 lb Medium shell pasta
  • 1/2 cup Mint leaves
  • 4 cloves Garlic
  • 1 Lemon zest
  • 2 Tbsp Lemon juice
  • 1/2 Cup Heavy cream
  • 2 Tbsp EVOO plus more for drizzling
  • 1 cup Grated parmesan
  • Fresh ground pepper to taste

Instructions
 

  • Bring a large pot of salted water to boil over high heat.
  • Add frozen peas.  Cook until peas start to float and are tender, about 3 minutes. Using a slotted spoon, transfer peas to a large bowl, allowing water to drain back into the pot.
  • Bring water back to a boil and add pasta shells.  Cook according to package instructions until pasta is tender but still al dente
  • While pasta is cooking, assemble your pea mixture. Start by setting aside about half of ½ cup mint leaves for serving; finely chop remaining mint. Add chopped mint to the bowl with peas.
  • Using a microplane, finely grate the lemon zest into the pea mixture, add the 2 Tablespoons of lemon juice, and 4 cloves of finely chopped garlic (I use a garlic press).
  • Add 1⁄2 cup cream, 2 Tbsp. oil, and 1⁄2 cup cheese to bowl with pea mixture and mash with a potato masher to break up peas. You want a mix of whole peas and smooth, mushy parts.
  • When pasta is finished cooking, transfer to a bowl with pea mixture (i like to reserve about ½ cup of pasta water to add into pasta to help make the sauce).
  • Season mixture generously with pepper and more salt, if needed, toss with a wooden spoon so hot pasta melts cheese and thickens to a creamy sauce.
  • Divide pasta among bowls. Top with remaining cheese and reserved mint. Drizzle with oil.

Baked Pesto Salmon in Phyllo

In my book, phyllo dough is the perfect way to fancy up a meal with minimal effort! You can wrap the paper-thin dough around just about anything and presto you’ve got a dinner worthy of guests. My baked pesto salmon wrapped in phyllo is super easy and made even tastier thanks to my pesto recipe, which you should always have on hand in your freezer. (I also always have a box of phyllo dough stashed away in my freezer just in case.) All you need to do is follow the thawing instructions on the box, and you’re all set for the next time you need to whip up a dinner for friends. Or if you’re just trying to trick your kids into eating salmon!!

Baked Pesto Salmon in Phyllo

Ingredients
  

Pesto Sauce

  • 1/2 Cup Pine nuts sub walnuts if you want
  • 3 Tbsp Diced garlic about 9 cloves

  • 1 Cup Freshly grated reggiano cheese

Salmon in Phyllo

  • 8 Salmon fillets 4-5 oz each (skinless/boneless)
  • 8 Sheets Phyllo dough
  • 1/2 Cup Melted butter
  • 1/2 Cup Pesto sauce
  • Salt and pepper to taste

Instructions

  • Place the pine nuts and garlic in a food processor or blender and pulse for 30 seconds.
  • Add the basil leaves, salt, and pepper.
  • With the blades running slowly pour the olive oil in until the pesto is finely pureed.
  • Add the cheese and puree for a minute.
  • You can serve with your favorite pasta, or over baked chicken. You can also store in the refrigerator or freezer.

Salmon in Phyllo

  • Brush melted butter on a half sheet of phyllo
  • Place another half sheet on top of the first and brush again with butter.
  • Place each salmon fillet in the center of 1 long edge of the phyllo sheet.
  • Spread 1 tablespoon Pesto on the salmon. Season with salt and white pepper.
  • Roll the phyllo in a cylinder and crimp the ends to look like a party favor. Brush tops with melted butter.
  • Repeat to make 8 rolls. Bake on a cookie sheet in a preheated 400 degree oven until nicely browned, about 10 minutes.

Little Gems with Avocado Grapefruit Vinaigrette

Anyone can make a salad… but chef and restaurant owner Dana Slatkin who owns my favorite neighborhood bistro Violet taught me how to make a knockout salad in basically no time at all! A couple of the secret ingredients include: Avocado Oil & Grapefruit Balsamic Vinegar which add a lot of the flavor. Make sure you don’t forget to salt and pepper your lettuce, it truly makes all the difference in the world. This recipe is super simple and super delicious, a definite must-try! 

When I first started my blog a few years ago, I had the launch party at Dana’s house for a cooking class. Now you can go to Dana’s restaurant and enjoy all her amazing recipes, plus there’s a cooking school there as well…it’s really a magical little slice of Paris in the middle of Westwood and it’s definitely worth a visit!

Ingredients
  

Avocado Grapefruit Dijon Vinaigrette

  • 1/2 Medium Shallot finely chopped
  • 1/4 Cup Grapefruit Balsamic Vinegar
  • 1 Tbsp Grapefruit or Lemon Juice
  • 2 Tsp Dijon Mustard
  • 1/2 Cup Avocado Oil
  • Kosher Salt and Black Pepper to taste

Salad Base

  • 1 Head Butter Lettuce
  • 1 Handful Chives or Tarragon chopped
  • 1/4 Cup Toasted Pepitas or Pine Nuts
  • Sliced radish, cucumber, cooked lentils, cooked haricots verts, green beens, har-boiled eggs, citrus sections, etc. (optional)

Instructions
 

  • Prepare the Avocado Grapefruit Dijon Vinaigrette. In a small bowl, whisk together the shallot, vinegar, juice, and mustard. Whisk in the oil in a slow stream to emulsify.
  • Season with salt and pepper. (The Vinaigrette will keep refrigerated in an airtight container for up to a week.)
  • To serve, toss the lettuce lightly with some of the vinaigrette in a large salad bowl.
  • Divide among salad plates and top with the herbs and nuts. Just before serving, drizzle a little more vinaigrette and grind some salt and fresh pepper over each.

Ok, my friends, I am about to change your life! I am going to teach you how to break out of your self-imposed limiting thoughts and behaviors with the help of one of my dearest friends, Diane Altomare, an Integrative Certified Life Coach and motivational speaker. In some weird twist of fate (and that’s another long story) I looked at the website of a noted self-help author/speaker who I had seen on Oprah. She had a roster of “Life Coaches” she had trained. I looked through the coaches and something drew me to one photo. It was the photo of Diane Altomare…who would not only coach me over the next year…she would become a trusted friend who told me at the end of one of our phone calls that she knew someday we would do big things together, she had a vision of us on a stage together helping people through the struggles that so many of us share together.

Well fast forward 10 years and this summer I reached out to Diane and said remember when you said that we were going to help a lot of people? Well, I think I have just the way we can do it.

So together we created an online course called: “Embracing Your Greatness 21-day Challenge”.

Valentine's Day Pink Pancakes

Since Valentine's Day is coming up, I figured this recipe was perfect, because who doesn’t want pretty pink pancakes that are actually healthy-ish for you? These pink pancakes have been a favorite in my house for years. It’s an easy and delicious recipe that quickly comes together in your blender and is super kid friendly and healthy. The pancakes get their color thanks to the beet puree...and beets are chock-full of essential everyday nutrients like B vitamins, iron, manganese, copper, magnesium, and potassium…what’s not to love?

Ingredients
  

  • 3/4 Cup Water
  • 1/2 Cup Ricotta Cheese
  • 1/4 Cup Beet Puree
  • 1 Tsp Vanilla Extract
  • 1/2 Tsp Cinnamon
  • 1 Cup Pancake Mix
  • 1/4 Cup Apple Grated
  • 1 Spray Non-stick Cooking Spray
  • 1 Tbsp Vegetable Oil
  • 3 Tbsp Maple Syrup optional
  • 1 Cup Fresh Fruit optional
  • 1 Tbsp Powdered Sugar optional

Instructions
 

  • In a blender or food processor, combine the water, ricotta cheese, beet puree, vanilla, and cinnamon.
  • Don’t overmix, you want the batter to be lumpy.
  • Coat a griddle with nonstick spray and heat to medium high.
  • Add 1/2 tsp vegetable oil.
  • Use 1/4 cup of batter at a time and pour out pancakes. When you see bubbles start to form, it is time to flip the pancake. If the bottom is too brown, turn the heat down. It should take about 1 to 2 minutes per side.
  • Serve warm, garnish with maple syrup, fresh fruit, and powdered sugar.

The Easiest Bean & Beef Chili

This is my easy Chili recipe perfect for a cold winter night or Sunday afternoon watching football. You can make it as mild or spicy as you want by adjusting the chile peppers, chili powder and hot pepper sauce.
I love to serve mine with sour cream and cheese on top, and my weakness is putting it all on top of a bed of Fritos. What’s great about this recipe is it makes a big pot, so I always freeze a good portion to enjoy later!

  • 1 lb Ground Beef
  • 1 Onion Diced
  • 5 cloves Garlic
  • 1 can Diced Tomatoes 28 oz.
  • 1 can Diced Green Chile Peppers 8 oz.
  • 1 can Tomato Sauce 8 oz.
  • 1 cup Water
  • 1 can Kidney Beans 15 oz.
  • 1 can Pinto Beans 15 oz.
  • 2 tbsp Chili Powder
  • 1 tbsp Ground Cumin
  • 2 tbsp White Sugar
  • 1 tbsp Salt
  • 1 tsp Ground Black Pepper
  • 1 tbsp Hot Pepper Sauce

Instructions
 

  • In a large pot brown ground beef, and drain.
  • Add onion and garlic and cook until onion is translucent.
  • Add tomatoes, chile peppers, tomato sauce, water, kidney beans, pinto beans, chili powder, cumin, sugar, salt, pepper and hot sauce.
  • Simmer for 30 minutes, and serve.
  • Garnish with sour cream, cheese, extra onions and of course my fav Fritos (or other corn chips)!

I don’t know about you, but once I hit 50 I really started seeing the changes in my hair.  Yes of course there’s the gray factor.  But I also noticed it definitely started thinning out and became drier. We can thank our hormones for those fun changes, not to mention the stress of the past few years. 

My hair in fact has always been the part of me I wish I could change…what I wouldn’t do for thick long voluminous tresses. And now that I am older and definitely seeing the wear and tear, and lack of hair, it’s a big concern. I am also one of those people who has to wash and style my hair every day (which I know isn’t great for my hair) but, because it’s thinner it just never holds a style on the second day.

That’s why I was so thrilled when Hair Biology approached me about trying their line of products designed specifically for women of a certain age.  The scientists at Hair Biology formulated products to work with our unique hair biology as we age, not against it.
