As I am writing this we’ve officially been living in a hotel for 10 weeks waiting for our new home! I recently asked Ben what he wanted me to make him once we had a kitchen again. He immediately said your “Special Pancakes!” So I thought I’d share them with all of you.
Not sure why we started calling them special pancakes, I guess because they are kind of like a cross between a crepe and a pancake. You can fill them with whatever you would prefer. We typically add either maple syrup or powdered sugar, and sometimes if I am lucky I get some fresh fruit in there.
Full disclosure, the day I made these I wasn’t in my house I was at my sweet friends house. I burned the pancake, made it too thick, the pan was too big, and I didn’t have time to do it again.
Having said that Elsie (not sure where Ben was) still gobbled it up. I always say as long as it’s filled with love how bad can it be?
Special PancakesPrint Recipe
1/2 c flour
1/4 c sugar
3 tablespoon butter
1 c milk
1 tsp vanilla
Heat milk, butter and vanilla.
In separate bowl whisk eggs and stir in flour, sugar, and salt.
Poor heated milk into egg mixture and whisk until smooth.
Pour ¼ cup batter into heated (medium high) crepe pan (i use just a small non stick pan) that has been coated with butter.
Tilt the pan with a circular motion so that the batter coats the surface evenly.
Cook for about 2 minutes, until the bottom is light brown.
Serve with either powdered sugar, maple syrup or fruit.
